Coverage for cheeses - Coating for cheeses

The cheese that we serve in our table, is a universal food, that exists in all the regions of the world from milk of different species of mammals. It is one of the best foods for man, not only for its unobjectionable nutritional value, but above all for the extremely varied organoleptic characteristics, which transform it into a pleasure. But the conditions of storage and maturation of the cheeses are ideal for the growth of fungi and yeasts. That is why the role played by the coating for cheese, or also called coverage for cheeses, is fundamental.


BIOTEC S.A. developed a coating line for cheeses (or cheese coatings), which protects the surface from the attack of fungi and yeasts from the brine to the final finish. The active component is natamycin, known since 1955 as antifungal, ideal for the prevention of the growth of fungi and yeasts in food. It has no antibacterial action and does not interfere with the natural processes of cheese maturation.


Working in optimal hygiene conditions and under good manufacturing practices is ideal, but not always. That is why prevention is important.
